Extracting Numerical Values From Surface Plot

Hello!
I am a graduate student who is working on a project that utilizes FSI to examine the parameters of a 3D blood vessel. I have a solved model and was able to generate a wall shear stress surface plot. Is it possible to create a graph/1D plot that demonstrates the magnitude of wall shear stress of the surface plot vs. the distance from the inlet of the vessel? I want to demonstrate the differences of maginitude of wall shear stress over the length of the vessel.
